How to edit scss files and compile them to new css?

Hello.
A project with a bunch of scss files in blocks came to me for change: _header.scss, _fonts.scss, _footer_scss, etc. I need to partially change colors, fonts, etc. I use galp for elementary assembly of the project, but I have never used it to assemble from separate files into one, tell me how to set up galp step by step so that I can edit scss files and it will collect new css for me. Or can I edit css and not worry? How do frontenders do it?
