How can you hide from him? Will using a VPN with ssl encryption help or not? Or maybe some kind of tor? Or will nothing save from SORM if it is connected?

Nothing will help. They see through your soul, and fiber is like an open book to them. Your phone is tapped through antenna vibrations, and the fitness tracker puts the data directly on the FSB server. Big brother is watching you, and life is decay.
Take the trouble to at least read what SORM is and at what level it works. This is absolutely open information and there is a lot of it on the Internet. Then read about the OSI layers and what is a VPN and at what layer does it work.

VPN will hide the traffic (however, there is no guarantee that the hoster at the output, where your VPN server is, does not have an analogue of SORM).
There is no speed reduction, traffic is simply mirrored to other ports.
