I want to create a bot so that people can write anonymous stories there, which will then come to me. So that I, too, could not know from whom they came and then published them under pseudonyms on the channel

Technically, anonymity cannot be guaranteed. The bot always sees the name and id of the user who writes to him.
But you can write a bot in such a way that it doesn’t save the user who sent the message anywhere, doesn’t show it to its administrator, and doesn’t even fire in the logs. Users still won't be able to check it. Usually, fans of this genre are not so advanced as to think about this, so many do not even doubt when they write to the "bot for anonymous letters" that various channels, including opposition ones, have.
Alternatively, you can invite users to leave stories in a third-party source, and send a link to the bot. For example, let them post on pastebin.com and send a link to it. True, this is quite confusing and inconvenient, people will get confused or even decide not to get involved at all.
