Use MKVToolnix to extract the desired subtitle streams from MKV files.
Use https://pas-bien.net/2srt2ass/ to merge two SRT subtitle streams into one ASS.
Add the resulting ASS to the original MKV and make it the default subtitle stream.
And then, if I'm not mistaken, you can use VLC as a converter of the resulting file to the desired format. If the subtitles are not "imprinted" into the image, then a screencast will have to be recorded.
