How to configure Postfix + Dovecot to save sent emails?

The picture is as follows:
With a colleague, the company raised a mail server based on iRedMail (Postfix + Dovecot + Roundcube). About 90% of users connect mail via POP3. When configuring, the parameter "Leave messages on the server" is required. But the saving of sent letters on the server does not occur.
How is this possible to set up?
I don’t see a solution to leave POP3 for IMAP, because in some cases, you need to get other people's letters (for the security of corporate information, or just an illiterate employee accidentally deleted an important letter in the client and it remained on the server).

Unfortunately only IMAP with email reservation. Or disable deletion for some users.
