How to configure openfire jabber server to work with encryption?

1. Do I understand correctly that if you select the "Disabled - Encryption is prohibited" option in the client connection settings, then all messages and credentials transmitted over the network (when authorizing clients) will be in clear text?
2. Please tell me how to set up encryption easier and faster? Did anyone come across instructions in Russian?
* And yet, regarding the first question, I see that in the admin panel about working through port 5222, it says that it works with STARTTLS, and this is an encryption system.
At the same time in Wireshark, I could not find the data in clear text.
It turns out that openfire still encrypts traffic?

At least with a sniffer, I could not make out anything in the intercepted data ...
