What is better to choose:
1st option: a server with 2 sockets 2nd
option: 2 servers with 1 socket each.

In terms of performance - completely and completely from tasks. You can write an application so that it can work effectively on two machines, or you can not write it =)
For example, distributing static from two servers will be much faster (and it's easy to distribute it from two servers). But the application server scheme on one piece of iron + database on the second will be slower than one server if one server does not run into IO.
