I need Google Spreadsheets to consider data like 10.5 as a number, in which the separator is a dot !

You can put USA in File -> Spreadsheet settings -> Locale
Or customize the format of an individual column by selecting it and using the Format menu

Switch language. In English and Russian, the separator changes from dot to comma and vice versa.
