I use the Strong Testimonial plugin, I need to slightly change the functionality of the js script, how can I do it correctly so that everything works after updating the plugin?

Deactivate with wp_deregister_script()
Copy the original script to yourself and change as needed and re-register in the VI and connect according to the code.
