How many servers do you need for a small business?

Didn't know how to ask the right question!
Hello.
I can not decide how to do it right, experienced admins can tell.
I'm trying to put things in order in IT at our small sewing enterprise.
The question is the following: how many virtual servers need to be created for our tasks.
We have several physical servers, 2 of them are running ESXI.
There are the following tasks.
- Database for 1C (Not loaded, 2 users)
- Database for self-written ERP (Mysql)
- Server part for the past accounting program (Rarely used)
- Ancient program for some documents (Very rarely used)
- Self-written program for time stamping of employees
- Local site
- and other small services
How many servers to divide tasks into? In theory, one server can easily cope with linux or Win Server.
On the other hand, it seems logical to install a separate virtual machine for each task, with a server, but all this requires resources, in which I am limited.
How to properly divide tasks among servers?

2 normal servers with hypervisors. Replicate critical services between servers and back up, non-critical services - only back up. Backups to some NAS (D-Link, Synology, self-assembled, etc., for which there is enough money). Ideally, two storages.
If there is only one server, then there will be nowhere to run either a replica or a backup.
Many services can be combined on one virtual machine, but this is already depending on the situation: I would not deploy a DBMS for any system, a mail server, and a file cleaner on the same machine.
