How is the transfer of video from the client (the client is an android program) to the server and vice versa (viewing the video from the server by the client) organized, in short, like on YouTube. By what protocol is all this transmitted, what libraries are there to implement all this on android, in general, how to organize streaming?

I won’t tell you how to organize the transfer of video from android to the server, but Live streaming is widely used to distribute video from the server, this is a data transfer protocol from Apple. For example, this protocol uses Twitter and VK (sort of).
Support for HTTP Live Streaming natively in Android has been present since version 3.0.
