Hello, how quickly can you master bash scripting to the level of a sysadmin interview? What resources are best to use (books/courses)? Background - I can more or less operate with a shell, write code in JS, JAVA and a little Ruby.

There are ambiguities there, but in principle, more than enough for an interview.
The main thing is to spend a few hours directly on practice and write a couple of scripts for a system administrator purpose
- backup of some folder with logging, ideally with cleaning outdated archives
- monitoring of free space on some partition with sending a notification
- launching a script to check if it is running another instance of the same script
