How does the bank understand the type of vendor (for example, bookstore or pharmacy)?
When I make a purchase on Amazon, the bank understands that the transaction is classified as "Books". When I buy in a drugstore, then to "Health". How does the bank get this information and is there a way to hide/replace it? For example, by changing the values for 3D Secure requests.

Not allowed. This code is put down by the seller when it sends a request for a transaction to the bank. The client will never see this data.

It cannot be changed, it is set to the merchant (outlet) by the acquiring bank, and does not depend on the cardholder in any way.
You can usually view the MCC code in the Internet bank in the transaction data, but not all banks show it.
