How does a 301 server response work?

I want to make the URLs of the pages NC, so I need to put a 301 redirect on many pages.
But how do search engines work? Do they just change the URL in the index and already show the new URL in the search results, or will it always be the old page in the search with a 301 redirect to the new page?
