It is necessary to display products from all stores on one page, with the ability to filter by category. Again, each store has its own categories.
There was an idea to create your own list of categories, and link categories from stores to your own. But this is a long time, because Stores can have about a thousand categories.

In general, you will need to go through the categories several times, writing down the category master in your system. Notice if the category is "Press washers -> accessories". Then the ultimate you will have accessories. And you will need to correct such duplicates.
Steps -
1) Automatic mapping to master categories. Here I think everything is clear.
2) Manual for one magazine. Can be diluted with semi-automatic input. You see a category, choose either from the automatically suggested ones, or select2 with a search by words. You can fill in about 500-1000 categories in an hour. The work of an assistant here costs much less. After passing each store, you need to take 3 steps.
3) automatic mapping of new categories into the system.
