How convenient is it to watch logs in elastic bypassing Kibana or how to set up Kibana so that life stops being a torment?

The technical director of the project uploaded all the logs to elastic. Previously, I operated with logs that were written to text files, which made it possible (from my point of view) to track errors, make selections flexibly, and it was simply clearer. Now we need to set up filters (which is not difficult) and put up with the display that is convenient for the technical director (whose approach does not fit in my head at all, for example, if I only need messages, then why should I see another one and a half to two dozen auxiliary ones in front of this field).
From here, a logical question arose: how to simplify your life and work either directly with Elastic, or set up Kibana so that it would not be excruciatingly painful for the time spent? In fact, in terms of setting, I’m only interested in the question of disabling from the display of the document (namely, the document, when it is expanded, it’s not difficult to display one message in a short form) of all the fields I don’t need.

Kibana has such a thing - Visualization and Dashboard. The first - as a matter of fact the saved selects. Set up the select (filter) you need - and that's it. These selects can be combined into dashboards.
