How can I view exim sent emails?

There is a server on debian from which spamming was carried out by php scripts.
The malware has been cleaned up, but there are fears that something has survived and continues to spam.
There is nothing suspicious in the Exim queue yet. Is there a way in Exim to view the headers sent and delivered to the addressee of emails?
Tried to look

eximstats /path/to/exim_mainlog
nano mainlog
exim -Mvh 1XrHVS-000067-10

How can I make sure that spam is not being sent from my host anymore?
PS: I'm generally 0 in nix, but fate forced me to face it) I would be very grateful for your help.
