How can I see all nginx variables of a specific http request?

In general, I have two questions, the second question is how to write to a file using http and directly nginx (so far I haven’t really looked for it, suddenly someone knows a good howto)
Well, the first one can be understood from the structure of the nginx conf file for some site, that a separate process opens with its own enviroment and, of course, there are variables there, so how to get not just a list of existing variables, but a list of actual variables for the request.
