How and what information can be obtained from a smartphone running android?

Good afternoon,
I became interested in the question - what kind of data about a person and what software / methods can I get information from his phone? For example, in a situation where your old / current smartphone falls into "the wrong" hands, while the person knows the unlock key (graphic, pin, etc) and can do whatever he pleases with the phone. Conditions are close to ideal.
The question is also of interest, how, and whether it is even possible to make a certain "cast" of human behavior and then identify (with some degree of probability) the user on another device? All the proposed options will be tested on your old smartphone. I am also ready to discuss this issue in a private conversation.

Boot into recovery and dump the file system (if recovery can do this) or flash another recovery.
