How and in what way do you maintain an up-to-date list of company servers?

Servers in the subject mean both physical and virtual.
I would like to get away from the practice of maintaining such a list in a plate that is never up to date, since there are outsource admins who produce virtual machines somewhere, there are full-time admins who are no better. There are no rules for setting up a new server as such, since most often a server was needed yesterday for a project.
There is an idea to make a git repository and regulate when creating a new server to send a commit with updated information to the repository, I don’t know how practical this is.
As a result of all this, the question arose - how is the situation with the subject?

Until there is a procedure, for the failure of which the admins will be ... subjected to all sorts of unpleasant procedures, nothing will help. What's the difference what not to fill in, a table or a git repository.
