For what reason do the video card indicators jump?

Jumps GPU, MEM and TEMP in MSI AFTERBURNER under loads on the video card (in games)

Changed thermal paste.

Such jumps began to occur relatively recently, this was not observed before and everything worked like clockwork, at one point I noticed that my fps periodically began to drop sharply and recover back.

Assuming it's a miner, clean your PC with Malware Bytes.

That's the news, right? Why would a video card be loaded in games, right?

Really looks like a miner or chip dump.
