Large services like booking have a non-trivial structure. And it is worth developing such services either from scratch or using low-level frames to develop on their basis for the task. For example, on a symphony or a falcon.
The question is not which framework is cooler and what to choose, but how to write code. Laravel, as is often the case, is not backwards compatible very often, and the latest versions generally consist of 30-40% Symfony components. Complex systems are also written in Yii2 and they work - you just need to try to write competent and flexible code. And in the era of microservices - write in general every service on anything.
