We produce large mailings from the site and run into restrictions from Google.
If the mail is left on GMail, but the mailing is done using the mail server on the hosting - is it also possible?
Naturally setting up SPF, DKIM, DMARC - will there be no problems with the delivery of mailing letters? Will they not end up in spam?

The server for receiving letters must be one. Yours is gmail. And there can be many sending servers, often there are three or four.

What is important when setting up records:
DKIM for each
SPF sending server is one common, combined indicating all sending IPs of all servers
Do everything right and there will be no spam, I also advise you to use amazon ses or mailgun
