Everything is encrypted. Only in regular chats, the keys are stored on the server and Telegram, in theory, can read your correspondence. But the keys of secret chats are stored on the device itself and without your phone no one will be able to read the correspondence.

All transmitted data is encrypted using the MTProto 2.0 protocol.

As already mentioned above, only secret chats are encrypted. But it's better to use an open source version of telegram like Telegram-FOSS
