Does an ssl certificate apply to domains like example.test.ru?
That is, if I issue a certificate for the test.ru domain, will it automatically work on all subdomains?

By default, no. You need a wildcard certificate that works on any subdomain.

You can manually additionally specify several of its subdomains in the certificate of the main domain.
For example, see the certificate of this site:
DNS-name=toster.ru
DNS-name=www.toster.ru
