Can you please tell me if some sites really use several languages for the backend? I understand correctly that, for example, one language is used for authorization, another language for something else? It turns out that one REST api is used for authorization for something else another REST api?

Yes Easy. And they can use a bunch of technologies, and different databases on one site - all this can be. Because PL and so on are tools. If a tool is suitable for solving a problem and there is experience working with it, it is used.
