opendkim-testkey only checks if the key and dns record match? everything is ok with them, so you need to check postfix and opendkim
opendkim is working and listening on port 8891 ?
what does postfix and opendkim write in the logs when sending a letter?

There are several options:
1) Create folders with dates, and there already get a list of files
2) Use some json file that will imitate a database.
3) Do filenames with a date prefix. For example: 1-20.08.2017.txt, 2-20.08.2017.txtand then pull out through regexp
4) You can try through filectime ()

Let me ask you, who are you writing this wonderful product for? Bo, I already foresee the joyful faces of the subsequent rakers of your product ... Well, if in order to "please yourself", if for someone else, then it's probably better not to.
