Define the site's API where it doesn't exist: what tools are used besides / instead of Fiddler, Charles?

A banal situation: there is a noname site without a documented API, and as always, you need to define this API yourself in order to use it later in scripts.

To do this, use Fiddler or Charles. Perhaps these are outdated tools and now there is something more practical than the two mentioned, tell me which ones you use and why these.

I found this article in the open spaces: https://alternativeto.net/software/postman/ , where the following supposedly analogues are given, but, as I understand it, they are more for testing:

  • Insomnia REST Client
  • Paw
  • soapUI
  • HTTPie
  • Advanced REST Client (ARC)
  • HttpRequester

  • RESTer
  • RESTClient

  • Graphical
  • HTTP Client

  • RESTtest

  • httpmaster

  • GraphicalHttpClient

  • stop light

  • Requester

  • RESTed

  • apptalk.ninja

  • Fortress API

  • Httper

  • Assertible

  • Restlet

  • Windows RestClient

  • Servistate

  • FRequest
  • JunoRestClient

  • Rest Client

Of course, they don’t say anything to me, but if they worked, then tell me your impressions, how they helped and how they were in general.
