Deal with data storage?

Good afternoon. I recently started writing in objective-c under mac os x, I need to store data in the program, about 500-2000 key-value pairs. As I understand it, there are 3 common ways to store data on mac os x: plist, core data and sqlite.
I know what plist and sqlite are, but I still didn’t understand after reading several articles how core data is arranged. Maybe that will prompt articles that you can read, which compare functionality, performance and everything else for these three systems.
