Correct work with the framework?
1. Where do you keep a local copy of the project? openserver? What to do if there is a mismatch between PHP or database versions on the local version and the server one?
2. Which update method is the most correct? Something has become fashionable to laugh at FTP and SFTP, and continuous integration systems like Jenkins are still complicated for me. Or am I complexing for nothing?

You should laugh at ftp, and SFTP can also be used inside Jenkins, especially since authorization in sftp is possible by keys, without the need to enter a password.
Jenkins is very simple - stupid task scheduler. Really sit one or two evenings - very useful.
