Let's Encrypt and many other certificate authorities issue a personal certificate (public key), a private key (private key), a root CA certificate, and an intermediate CA certificate. Is it possible to sign your certificate with public and private keys via OpenSSL and thus extend the certification chain?

The certificate indicates its purpose (role). Typically, certificates that are issued to users cannot be used to sign other certificates. To do this, you need a certificate of the CA or an intermediate CA. Obtaining an intermediate CA authority certificate is not easy.
