If you go to gmail.com and log in by mail [email protected], you can receive letters to this address, although such a mailbox is not created on the hosting.
How does this happen and where can I read about it?

Most likely, your domain mail is delegated to G Suite
. To process mail on your own servers, you need to change the MX records in the DNS zone so that they point to your server.
You can transfer previously received mail from mailboxes in G Suite to your server using utilities like imapsync , after which the domain can be deleted from G Suite.
