Ran into this issue
gulp-sass 5 does not have a default Sass compiler; please set one yourself.

It is clearly written - the default compiler is no more. You need to explicitly set it. There are currently two main implementations, libsass and dartsass. The first is fast, the second is official and the most up-to-date.
