Can I remove default address lists in Exchange 2013?

Actually there was a desire to delete lists of addresses which Exchange creates by default, and to create the.
The question is, what is the risk? Is it possible to do this?
Or can they be somehow hidden so that users do not see them?

It is fraught with the absence of a Global Address List and/or Offline Address Book.
You specify what exactly and where you are going to delete.
If you are talking about the default address list, then it is generated automatically based on filters.
PS: Although it seems strange to me not to use such a powerful feature as OAB, it makes life much easier for your users.
