Can I opt out of order statuses in the store functionality?

If I want the simplest functionality of the store - can I refuse order statuses in favor of one status - paid? I don’t understand why these troubles with statuses at all, maybe there are pitfalls that can then surface? Isn't it easier not to fill the database with different statuses and work only with paid orders?

Are you asking permission? Well, refuse, who will stop you.
The pitfalls are kind of obvious - you won't be able to filter orders by status; you will not be able to notify the buyer that a courier has left for him (or the parcel has been sent by mail); you will not be able to see if there is some stage at which a large number of orders hangs.
Simply put, statuses are needed to organize the order processing process. Accordingly, whether you need them or not depends on what kind of process you have.
