I recommend going the following way:
1. Familiarize yourself with the structure of Asterisk, the dialplan language, configuring trunks and internal subscribers, and call routing. You need to do this on a bare Asterisk.
2. Install different builds and try them out: FreePBX Distro, Askozia, Elastix.
3. Rent a direct number via SIP, for example, on ipport.net, connect it to Asterisk with or without a face.
4. Buy an IP phone, such as the Cisco SPA-303, and also experiment with its connection.
