For my own purposes I want to make a small CRM system. Now I am studying other CRM systems and seeing how they work, but I would also like to read something scientific on the principles of designing CRM systems. Is there anything relevant from the books?

CRM is just one form. You want to design a system that will meet your requirements and you need to:
1. Make an idea of ​​​​the system
2. Make a list of tasks that it should solve
3. Make a list of use-cases that it should implement
4. Architect this
5. Program
That in fact, you need to understand the architecture if you have at least some complex system.
And if everything is quite simple for you and you have enough CRUD with login and password protection, then any Yii / Laravel / Symfony out of the box is enough for you
