Are there editors for the mobile version of the site - plugins for WordPress, with which you can edit the adaptive version of the site? I tried the yellow pencil constructor - but it does not open the adaptive one, it opens the computer version in a reduced size.

How is your website made? Most constructors, even Guttenberg have adaptations. If you want to fix the mobile version, then you need to switch to the mobile version, there are toggle buttons. And almost everyone has it in the lower left corner.
Try the popular Elemntor, Page Builder, Brizy and others first.
And if you have code, then only write CSS with pens.
