Are there books in which the project is created?
Can you recommend books/courses in which some project/product (or possibly parts) that you like is created in stages.

There are many such books. You just need to understand that all books on programming can be conditionally divided into two categories: reference books and manuals on specific languages/technologies.
The manuals describe all/most of the features of the language. There, as a rule, for each specific possibility of the language, an example is written in a “spherical vacuum”, to demonstrate specific possibilities.
The manuals describe specific technologies, and such books often include a project that shows a practical application as an example.
For example, in Freeman's books, a SportsStore web application is created, in books on neural networks there is often an example of predicting the exchange rate or handwriting recognition, in Arduino books you can find projects to create a weather station, and so on.
If you tell me which area/language you are interested in, maybe someone will point you to books with similar examples.
