Are pixel art in demand?
I remember many years ago it gave me pleasure to draw pixel sprites and their movement, given the restrictions on the volume and size of images.
Is it needed somewhere else? I vaguely suspect about games for mobile phones and icons. Do you need monochrome graphics?

Certainly. And not just for mobile phones. There's the same Scott Pilgrim vs the World
