Apache: how to secure the file system?

There is a server on which the site.com domain is located in the /home/site.com directory.
There are subdomain directories inside /home/site.com (www, test, etc.)
Question: Is it possible to make it so that using PHP it is forbidden to "go" one level higher outside the /home/site.com/subdomain folder or /home/site.com for executables that are inside this domain or subdomains?
