Remove applications: root + titanium backup, it can remove applications from the firmware.
Deny access: root + droidwall and deny Internet access to applications of your choice
Just cut off the connection: turn off GPRS and WiFi.

We are talking about a "paranoid" model of security - i.e. we allow the phone to access the Internet, but at the same time we disable any ability to “merge” information into Google.
Those. mail and address book, for example - exchange or Yandex
cards - Yandex or (garmin / tomtom / etc)
and so on

Let me summarize:
1. It is impossible to completely untie Android from Google services out of the box.
2. You can deny access to the network to some phone services (via root)
3. Deny the phone using WiFi and 3G / GRPS
For me personally, it's a pity.
