Is it reasonable to deny ICMP traffic to the server?

How reasonable is it to forbid ICMP traffic to the server on which regular sites are located? Another server is sometimes used as a proxy.

No.
ICMP is not only a valuable fur ping, but also many other service messages that may be necessary for work. Echo request can be banned from the outside - but you should not forget that many monitors can use it :)

It is impossible to completely prohibit ICMP in any case, because it is used, for example, for Path MTU detection.
