The device for accepting money is called a "billy acceptor".
As you can see, there are even holes for screwing inside the case.
It can be connected to the computer:
with one wire (an inserted banknote just generates voltage on a single wire a certain number of times),
COM port,
USB port (usually with COM port emulation)
Surnames and initials need a keyboard and screen.
The screen, for example, is as follows:
There are purely alphanumeric ones (it is better to choose them for your task), and there are screens on which any picture can be recreated.
You need a printer to print. There are special models just for installation in automatic devices.
It is possible that there are models that can print on cardboard.
To manage all this, a cheap microcontroller is quite enough, and not a full-fledged computer.
To get started, you can look at Arduino (these are a controller and kits for connecting screens and other devices to it). For a real project, if we are talking about a small series, you can also use it. In large-scale production, it is more profitable to order a board for your task.

You can buy a used payment terminal. There is everything except printing on cardboard.
But it's a very heavy iron box... but it's more or less a reliable money box.
software: forpay or utspay - they have more or less drivers for a diverse zoo of peripheral hardware
